Located just outside Burford in the rolling Cotswold countryside, Upton Smokery specialize in Smoked Meats, Smoked Fish, Biltong and Seasonings of the highest quality.
Smoking meat and fish is a method of preparing meat and fish which originates in prehistory. The purpose was to preserve these protein-rich foods for long periods . There are two mechanisms for this preservation: dehydration and the antibacterial properties of phenols and in the absorbed smoke.
Nowadays smoking is more about adding flavour and, much like cooking, the art is finding the right balance between the smoke, salt and meat flavours whereby no one part overpowers the others.
Our process may be relatively simple but we believe that our products are.......seriously good !
Upton Smokery we have over 14 years' experience in smoking meat, fish
and seasonings and are always looking for new ways to enhance the
flavour of our products.
We are all passionate about what we do and ensure we keep a close relationship with our customers to provide the best service possible.
James (far right) heads up our
finance team and is always on the lookout for new products and
suppliers. He joined the business following his passion for smoked meat
and after having fallen in love with our smoked duck.
James is Justin who oversees the operations of the business, you will
find him ensuring the smooth flow of works (and perhaps overdoing the
Peter (on the left) is our Head Smoker, who
always enjoys trying new products to smoke. His attention to detail
ensures our very high quality standards.
Anna is our
bookkeeper and looks after our office (and also kicks the men into
shape). You are most likely to encounter Anna when phoning the Smokery
with questions and orders.
